A Delicious Fall Recipe

 Harvest time has come once again, and I do hope you gardeners out there had a bountiful one. So many veggies and things you can do with them, it is difficult to choose. Some of my favorite things to cook when the weather gets cooler are cakes, pies, soups, and chili. However, we don't want to put on extra winter weight yet, so I will tell you about a delightful fall treat that has fewer calories but still tastes terrific Pumpkin Spice Bars. This pumpkin treat is delicious and very easy to make. All you need is a box of spice cake mix any brand or make your own, and 24 ounces of pumpkin filling.

Preheat oven to 350 degrees

24 oz. Pumpkin Filling

 Blend the cake mix and pumpkin. Pour into a greased 13x9 cake pan or muffin tins, either will work for this recipe. Bake for 20-30 minutes, check the pumpkin bars with a fork, judge for yourself if done or if they need to cook longer. Remove from oven and let it cool. Cut into squares or bars. You can leave the bars at room temperature, or you can chill them in the fridge they are delicious either way. Top with low calorie whipped cream to keep the treat on the lighter side or if you prefer, cream cheese frosting. Honestly, the bars are so moist and soft you could leave them plain, and they are still delectable.
