Thanksgiving Traditions Leftovers

After my husband and I made our first turkey together, we had to figure out a way to eat all the leftovers. But at the same time, not get tired of eating the same old stuff over and over. I mean, how many cold turkey and mayo sandwiches can a person eat? So he shared with me a recipe that was in his family for years and years, but I had never heard of it. And the thing is it is so simple and delicious I can’t believe I never thought of it. Turkey Salad Sandwich.

I know, I know sounds crazy right? Or maybe you family has a good recipe for it as well. All I know is that it is awesome and a great way to use up turkey leftovers. You don’t need many ingredients. Just some stuff you probably have in your home now.


  • Mayo
  • Leftover Turkey
  • Salt and pepper
  • Sweet Relish (optional)
  • Small diced onion (Red, Vidalia, Scallion)
  • Leftover cranberry diced  (optional)
  • Finely Chopped Walnuts (optional)

Now I know you are probably wondering why I didn’t use any measurements in my ingredients list. Let me assure you it is because I am not sure how much turkey you will individually have leftover. So this recipe is more done to your preference. And what I mean by that is everyone has a way that they enjoy ham, chicken, or tuna salad. Some like it creamy, some like it dry, some like it with fruit, and some just relish and onions. So this is no different from those salads and you will need to adjust the ingredients to your liking.

Debone and get all the meat you can from the turkey,discard any fat or veins and dice meat well. White and dark meat mix is what we do here, but again, use just dark or just white up to you. Place turkey in a mixing bowl and add mayo to your liking. Mix well , then add any accompaniment you desire. We usually do red onion and relish, so yummy. I thought a little bit of leftover cranberry would be a good addition because it pairs so well with turkey. I enjoy a chicken salad with grapes and nuts chopped up and added so I think it would also be a nice combination with turkey. Take mixture and spread on your favorite bread and enjoy a delicious turkey salad sandwich!
