Thanksgiving Recipe Traditions 2

This recipe is from my husband Zack. He is an excellent cook and somewhat of a foodie. A few years ago he was in charge of making desserts for the Thanksgiving feast. So he decided to do a pumpkin pie, but not a traditional one. Zack made an ice cream pumpkin pie and it is on our Thanksgiving menu nearly every year now.

1 can of pumpkin filling ½ gallon vanilla ice cream
1 graham cracker crust all ingredients for a pumpkin pie

Prepare the filling as if you were making a traditional pumpkin pie. (There is usually a recipe on the can itself or you could always use the trusty internet.) Let the ice cream sit out for about 10 minutes to soften, and then combine with the pie filling. Put mixture into pie crust and spread out evenly.  Now place pie in the freezer and let it set. This takes 1 to 2 hours. When you serve don’t forget the whipped topping.

You will probably have some leftover filling. Just put into a freezer proof container or another pie crust, or gobble it up,however, you see fit. This is one of the yummiest versions of pumpkin pie. So creamy and the pumpkin flavor is not lost in the ice cream. So glad my husband made this recipe and we now have it traditionally, thanks, Zack.
