Oatmeal Raisin Cookies


Oatmeal Raisin Cookies


In my house when the temperature drops, that means it's time to start baking. Homemade cookies, pies, and cakes are just the beginning. And here is one of my favorite recipes.


Oatmeal Raisin Cookies
1 cup of softened butter or margarine (I prefer butter)  1 ½ tsp cinnamon
1 cup sugar    1 tsp baking soda
1 cup of firmly packed brown sugar                               1 tsp salt
2 eggs    3 cups of uncooked oats
1 tsp vanilla extract    1 cup chopped nuts (optional)
2 cups all-purpose flour                                                  1 cup raisins


Preheat oven to 375 degrees .


Cream softened butter and sugars until smooth, beat in eggs and vanilla. In a separate bowl, combine flour, cinnamon, baking soda, and salt add them to the creamed mixture. Add oats one cup at a time, because it is way easier to mix that way. Then add nuts, raisins, and chocolate chips if you like. Drop by rounded spoonfuls on a cookie sheet. Bake 8-9 minutes for a chewy cookie, and 10-11 minutes for a
more crisp cookie.


Now, of course, the size of the cookie does affect the cooking time. So bigger cookies will need to bake a little longer and smaller cookies will need to bake for a lesser amount of time. Also, every oven is different, and so you may need to adjust cooking times based on your personal oven. It is a little bit of trial and error.
